Fall is a time for harvesting...this is just the perfect time to start this! Amber’s Garden pre-seeded vegetable mats are perfect for the dirt challenged among us. Just put the biodegradable mat made of burlap and plant fiber in a sunny spot in the yard (or cut it up to fit in patio containers), cover with amended topsoil, and water according to directions. In five to seven days, veggies begin to sprout; in as little as 35 days, as long as you keep watering, you’ll be harvesting.

Herbs (thyme, basil, cilantro, oregano) are a cinch; same goes for the ingredients for salsa (tomatoes, chili peppers, cilantro) or a pumpkin patch. And if you’ve got a more ambitious green thumb, it’s not too late in the year to plant the Summer Crop (corn, green beans, tomatoes, carrots, and radishes) or Rainbow Root (two types of beet, two types of carrot, and turnip).
